Thanks. Yes they do look like marshmallows! This is early in the maturation process, so they look quite different to a fully ripened wheel of delicious Roquefort.

I’m really enjoying this series – unfortunately, I’m allergic to cow’s milk, so it’s more from remembering how much I liked cheese (which was a lot).
That’s okay. Roquefort is made exclusively from unpasteurised ewe’s milk 🙂
